Have you got a breakdown on calories, fats, etc.  With all the cheese and heavy cream, most of us will either dum*****t be able to eat it....I know I would not be able to.....

I do something very similar, just easier as I am the only one at my house that will eat sweet potatoes.  I nuke a sweet potato, take out the insides and ma**** with  vanilla protein powder, cinnamon or pumpkin pie spice and butter (no eggs)

Just wanted to share.  I made this today, loved it.  Modified from a recipe I found online.  I think it would be good with broccoli too.  I will try that next time.

Baked Cauliflower Casserole

Ingredients

1

head of cauliflower - washed and cut into florets

1 Tbsp Butter

 1/2

small onion, finely chopped

1 tsp

tangy dijon mustard

2 c

shredded Colby jack or cheddar cheese

1 c

heavy whipping cream or half and half

1/2 jar(s)

hormel real 50% less fat bacon bits

1 tsp

salt

1/2 tsp

black pepper

Directions          Preheat oven to 350 degrees.

1 Steam cauliflower florets in about 1/2 inch of water in a covered dish in the microwave, about 6 minutes or until tender.

2 While cauliflower steams, melt butter over low heat in a heavy-bottomed 2-quart sauce pot, and lightly sauté onion for 2 minutes, until soft. Slowly pour in 1 cup heavy whipping cream. Add Dijon mustard, stirring mixture well.

3 Stir in 2 cups shredded cheese, stirring until melted and smooth. Remove from heat.

4 Stir in bacon pieces, salt and pepper. Add cauliflower and fold cauliflower into sauce.

5 Scrape into a sprayed (Pam) 2-quart casserole dish.

6 Bake at 350 degrees in preheated oven for 15-20 minutes, until bubbly. Broil a few minutes when done to get desired color on top.

Cinnamon Orange Energy Bars with Orange White Cacao Frosting

(Makes 28 2 x  4″ bars)

  • 1 cup almond butter or peanut butter
  • 6 dates, soaked and rinsed
  • 1/4 cup date water (from soaking dates)
  • 1/4 cup coconut oil, melted
  • 1 orange, juice and zest from
  • 3 tablespoons raw, organic agave nectar or other liquid sweetener (optional)
  • 1/2 cup chia seeds
  • 1/2 cup hemp seeds
  • 1 cup pumpkin seeds
  • 1 cup raisins
  • 3 cup raw oat flakes or quinoa flakes
  • 1 tablespoon cinnamon
  • 2-3 tbsp dark cocoa powder - optional

1. Combine the almond butter, dates and date water in a high-speed blender or food processor. Blend or process until smooth. 

2. Remove to large bowl and stir in coconut oil, orange juice, orange zest and liquid sweetener. Stir. 

3. Add the remaining ingredients. 

4. Roll out mixture between 2 sheets of parchment paper to 1/4″ thick. Remove to drying racks and place in oven (no heat!) overnight to dry. You can also leave them out on the counter but I have dogs. 

5. Frost with White Cacao Orange Glaze if desired.

Orange White Cacao Glaze

  • 1/2 cup raw cacao butter
    (not coconut butter)
  • 2 tablespoons raw, organic agave or liquid sweetener of choice
  • zest from one orange (about 2 tablespoons)
  • or 1/2 cup light cream cheese
  • 2 tbsp powdered sweetner of choice
  • zest of orange.
  • Process as the cacao icing.

You can use any combination of seeds for the bars; I used what I had...chia, hemp and chopped almonds.

How about the old standby of `Muffin in a Mug`.  I spray a large coffee mug with pam, drop in an egg, 1 scoop of soy protein or other protein powder (not whey isolate; it lumps when cooked at a high temperature), a bit of flavoured extract, sugar/sugar substitute, some nuts, chopped fruit or cocoa powder and about 1/8 tsp baking powder.  Stir it all up and microwave it about 60 seconds.  Dump out and eat.  You can add cinnamon, any other spices, even remove the sugar and add cubed cheddar for a savory muffin.   They do not keep well; they are eat immediately as they get very dry otherwise....quick to make!  You will get about 20-25 g. protein from the protein powder and 9 grams from the egg, so it is very good for you.

CHEESY HAM AND GREEN BEAN CASSEROLE

Ingredients:
1 small onion, sliced very thin, 2.5 ounces
1/4 cup celery, finely diced
2 tablespoons butter
2 -14 ounce cans French-cut green beans, drained well
4 ounce can mushrooms, drained well
12 ounces ham, diced
1/4 cup mayonnaise
1/4 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon garlic powder
8 ounces pepper-jack, cheddar or Swiss cheese, shredded
Directions:
  1. Sauté the onion and celery in butter until very tender and a little browned.
  2. In a 2-quart greased casserole, mix the green beans, mushrooms, ham, mayonnaise and seasonings.
  3. Stir in the onion mixture, then top with the cheese.
  4. Bake, uncovered, at 350º 30 minutes, or until browned and bubbly.
