this sounds good i will be trying it. i made one the other day and used taco seasoning and added colby jack cheese on the inside and covered it with mild salsa.

Topic: Turkey Cheeseburger Meatloaf

This weekend I scored a deal on ground turkey, I bought six pack on Manager Special which is near the sell by date. So I bought 6 and have plans to make Turkey Cheeseburger Meatloaf, and even make some mini meatloaf to freeze for a quick portioned meal in the future. I live alone so it's nice to just pull a frozen mini meatloaf out, microwave it and make a single bag of steamer vegetables.

Turkey Cheeseburger Meatloaf

Ingredients:
 

1lb ground turkey
1 medium onion, diced
½ cup uncooked oats (or breadcrumbs)
¼ cup egg substitute (or 1 egg)
1 cup 2% sharp cheddar cheese, shredded
½ cup ketchup
1 tbsp yellow mustard
1 tsp Worcestershire sauce
Black pepper to taste
Lawry Season Salt to taste   Directions:   1. Preheat oven to 350 degrees

2. Place all ingredients in large bowl, mix well with hands. Place mixture into loaf pan. Top with additional ketchup if you prefer.

3. Bake at 350 for 1 hour, making sure center temperature is 165 degrees.

Makes 10 slices

Topic: Buffalo Salmon

A new favorite, adapted from Epicurious.  Seems to kill the chicken wing cravings. 

One 6-8 ounce salmon filet (can use smaller, just decrease cooking time)

1/3 cup Frank's red hot wing sauce

2 tblsp butter

Preheat oven to 425 degrees.  Melt butter and hot sauce together in the microwave, pour over the salmon.  

Cook for 12 minutes.  Enjoy.

1 store cooked rotissary chicken
1 pkg Multi Grain toritillas
1 pkg shredded LF cheese 
1 bunch cilantro
1 can bush's brand pintos
1 can Rotel original tomatoes with chilis

Add the can of tomatoes to the beans, bring to boil.
Warm tortillas in the microwave and chop the cilantro.  Serve it family style, the chicken on a platter just peel off chicken, place in warm tortilla sprinkle with cheese and cilantro. you can serve beans on the side but my family just puts a scoop on the taco.

I saw this recipe yesterday when you posted it so I made it for dinner.  It is fabulous. 

I'd eaten more carbs than normal yesterday so I ate it without the tortillas and I didn't miss them at all.  My husband and kids ate with tortillas and they liked it a lot.  They asked me to make it again later this weekend.
