Yummy Salad!!

I made this for dinner last night and then warmed up the leftover onions anad bacon and made another salad for lunch today. It is hearty and full of flavor but nice enough for an elegant dinner, as well. With protein and iron, it is a healthy choice. I hope you like it!! Jennifer Spinach Salad Baby Spinach, raw Onion Butter Splenda Brown Sugar Reduced Fat Turkey Bacon Eggs, Hard-boiled Honey Mustard Dressing of your choice I took the onion and sliced it into thin slices and put them in a skillet with a little bit of butter. I sauteed them until they were limp and cooked through. I then added a touch of Splenda Brown Sugar to give them a carmelized look and taste to them. Set them aside to cool. I took the turkey bacon and cut it into little pieces with my kitchen shears. I put them on a plate and popped them into the microwave. I cooked them (turning at least once****il well done (kind of crisp-chewy). Set aside to let them cool. For the dressing, I had a fat free honey mustard viniagrette. It was not very good but I hated to throw it away. I poured it into a bowl and added honey mustard, sugar free honey and a touch of regular splenda. Blended with a hand blender. Tasted tangy sweet which was what I was looking for. You can use the dressing of your choice but tangy sweet is best, I think. Place spinach in serving bowl. Pour some dressing on it and mix so that the leaves are coated but not soaked. Sprinkle the bacon pieces (I use them when they are still slightly warm.) over the top. Place a small mound of the onions in the middle (I like them still slightly warm.). I cut the hard-boiled eggs into wedges (or sliced with an egg slicer) and place them aroung the onions. Drizzle a small amount of the dressing over the top and grab your fork. I didn't put any amounts because that is really up to your tastes and how many people you are serving. This salad is full of nutrition and flavor. It was a welcome change from the usual salad. My husband and my 4 year old ate it up quick fast and in a hurry so it must have been pretty good.
