Bacon Cheddar Frittata
This is my favorite! It is perfect for breakfast, lunch or dinner.
INGREDIENTS:
3 eggs
1/2 cup of milk
1 green onion chopped (optional)
1 tablespoon butter, melted
salt and pepper
1/2 cup cheddar cheese shredded
bacon strips cooked and crumbled
add mushrooms or anything else you'd like.
DIRECTIONS:
In a bowl, whisk the eggs, milk, onion, butter, salt and pepper.
Pour into a shallow 3 cup backing dish coated with non-stick cooking spray. Sprinkle with cheese and bacon.
Back, uncovered, @ 400 degrees for 12-15 minutes or until eggs are set.
