Protein Soufflé
1 Cup Cottage Cheese
2 eggs
Generous handful (or to taste) of shredded cheddar cheese
Preheat oven to 350. Use a hand blender or a blender to puree cottage cheese and eggs together. Mix in shredded cheese by hand and pour into a casserole dish (no need for butter or cooking spray). Bake for approximately 45 min or until it's puffy and nicely browned on top. Makes 4 1/2 cup servings!
