Danish in a bowl
In a microwave-safe bowl, thoroughly blend 1/2 cup low-fat or fat-free cottage cheese with 1 egg.
Mix in 1 to 2 tsps. Splenda (or equivalent sweetness of another artificial sweetener), a dash of cinnamon, and a few drops of vanilla. Drop in a few slivers of no-trans-fat margarine, and a few small chunks of fat free cream cheese. Sprinkle top with a small amount of brown sugar substitute and 1 tsp. or so of chopped nuts. You can also sprinkle the top with 1 tbsp. wheat bran or ground flax seeds for a little extra fiber. Microwave until thoroughly set and bubbly (about 4 - 5 minutes in my microwave). Cool slightly and enjoy.
