Fake Potato Pancakes 6 Eggs (you won't taste them!) 1 cup chopped Cauliflower Flowerets 1 cup chopped raw Zucchini 1 cup chopped raw Cabbage 1/4 cup Olive Oil (for fry pan) - Cook Cauliflower Flowerets in Microwave for about 10 minutes - Combine Eggs, Zucchini, Cabbage and cooked Cauliflower in blender and mix into thick puree. If necessary, add water to keep mixture blendable. - Ladle mixture into fry pan with tablespoon over hot Olive Oil in amounts about two overflowing tablespoons to make separate round cakes. The pancakes will puff up slowly. Use a metal spatula to flip and fry till golden brown . . . but caution . . . if flipped too early, the cakes will crumble. Approximately 18 pancakes will be made.
