Spinach, Bacon and Cheese Casserole
I'm trying to use some of the items in my refrigerator and came up with this recipe. It is to die for!
Spinach, Bacon and Cheese Casserole
6 eggs
4 oz ff American cheese, shredded
1 package of turkey bacon, minus 5 slices, cooked in microwave and crumbled
1 cup fresh spinach, chopped
½ carton ff sour cream
1 tsp onion (more or less to taste)
Salt and pepper to taste
1-2 scoops tasteless protein powder
Put eggs and sour cream in glass bowl and whip with hand mixer. Add crumbled bacon, chopped spinach, salt, pepper and cheese and blend by hand with a large spoon. Add protein powder and mix just until blended (do NOT overmix). Spray an 8x8 pan with non-stick cooking spray and pour mixture into pan.
Bake at 350° for 15 minutes. Remove from oven and stir outside toward the center every 15 minutes. I used a stoneware pan and the total cooking time was 40 minutes, your oven time may vary.
Substitutions:
Substitute bacon for sausage, ham or other meat.
Substitute American cheese for other cheese.
Add other vegetables you may like.

I am wondering why you had to keep taling it out the oven to stir? Thanks!
I believe it's to provide the proper texture while baking...if you didn't stir it would come out like a crustless quiche and not chunkier like a casserole. Did that make ANY sense LOL!
