Spaghetti Squash with Chicken & Italian Sausage Sauce
This is an easy recipe I came up with using "store-bought" ingredients. Very yummy and easy on the pouch. Even my hubby loved this one! Enjoy!

Spaghetti Squash with Chicken & Italian Sausage Sauce
Serves: 6
Ingredients:
1 Spaghetti Squash, cut in 1/2 & de-seeded
Sauce:
2 Tblsp Extra Virgin Olive Oil (EVOO)
1/2 onion - diced
1 can (24 oz) Hunts Italian Sausage Spaghetti Sauce
1 jar (24 oz) Classico Tomato & Basil Spaghetti Sauce
4 oz. Perdue Original Roasted Carved Chicken Breast - chopped
1 - 2 Tblsp Italian Seasoning
Preheat oven to 350 degrees. Place halves of spaghetti squash, cut side down, in shallow roasting pan. Add 2" water and bake 45 minutes or until tender. Remove from pan and scape inside of squash with fork. Place "noodles" in bowl and set aside, keeping warm until ready to serve. (Pour off accumulated liquid before serving)
While squash is baking prepare sauce. Add EVOO & onions to a deep sauce pan and saute until onions are soft & opaque. Add all other ingredients and simmer, stirring occasionally, until squash is ready to serve (apx. 30 minutes).
Serve sauce over squash "noodles".
