Carla, I might have to make this again soon. Sounds good. My whole family including kids eats this. 4-5 chicken breasts 1 jar of salsa 1 lg jar or 3-4 cans northern beans cheddar cheese approx 6-8 oz monterey jack cheese approx 6-8 oz I also add a little chicken broth because it seems a little too thick for me. I just put it all in the crockpot and let it cook for approx 6 hours. I sometimes serve it with fat free or light sour cream. Sort of tastes like a taco to me. My husband doesn't like salsa at all, but he enjoys this chili. I have another recipe to but don't know where I put it right now. 4-5 chicken breasts(cooked) onion & fresh garlic green chili 4 oz can cumin cayenne pepper oregano 3-4 cans of chicken broth You start by sauteing the onions and garlic in olive oil. Then you add the can of green chilis and then the seasoning. Then add the chicken breasts and the broth. Let it simmer for a couple of hours. I also serve that with sour cream and some cheese. I usually make the first one as it is much easier. Hope you enjoy them. Lynn

Carla This is one of my favorite recipes and I was able to eat it at 4 weeks out pureed. It's from Ruby Tuesday's restaurant and appeared in Ladies Home Journal. Combine 1 pound Great Northern Beans 6 cups Chicken broth 2 garlic cloves, minced (I add more because I like garlic) 1 medium onion, chopped in a Dutch oven. Cover and bring to a boil; reduce heat and simmer for one hour. meanwhile, heat 1 Tbs olive oil in a skillet. Add 1 medium onion, chopped and coo****il tender (about 5 minutes). Stir in 2 tsp cumin 1 tsp oregano 1/4 tsp ground red pepper 1/8 tsp cloves and cook one minute. Add to beans, cover and cook 1 to 1.5 hours until beans are tender (this always takes me two hours) adding up to two cups of broth or water if needed. Stir in 1 pound of diced chicken and 2 cans (4.5 oz) of chopped green chilies (I sometimes use one fresh one) and cook 12-15 minutes until chicken is cooked. Serve with sour cream, salsa and Monterey Jack cheese. ENJOY!!

There is a White Chili mix from McCormick's that is just great! I made it pre op and the family loved it. I plan on making it again, but I have to check the sugars and all that. It was easy and quick and very good. I have an issue with beans right now, and I am not up to meats. (4 weeks out Monday) Tiffany
