Cheddar Pancakes

Cheddar Pancakes
Makes 2 pancakes
2 ounces grated cheddar cheese
3 tablespoons sour cream
1 large egg yolks, beaten
Pinch of salt
1/2 teaspoon thyme (I used a bit of Italian seasoning)
Pinch dry mustard (I used a few drops of dijon mustard)
2 tablespoons unflavored protein powder
Put the grated cheddar cheese in a bowl and add the sour cream and egg yolk, mixing well after each addition. Add the protein powder, salt, thyme and dry mustard, which have been mixed well in a separate bowl or cup.
Spray a skillet with cooking spray and drop the batter by teaspoon into the skillet. Cook over medium heat until lightly browned on the bottom. Loosen the edges with a spatula, turn and lightly brown the other side.
