I saw it awhile back. It was like an egg quiche made in muffin tins. I would love to find this recipe or any version. Thanks, Kelly

I love these. I make them, store them in the fridge and nuke them in the microwave in the mornings when I want them. 6 eggs 6 tbsp salsa 1/2 cup shredded cheddar cheese 1/2 cup shredded mozzarella cheese 10-12 turkey breakfast sausages--cooked Heat oven to 425. Beat eggs in bowl and then add the salsa and cheese. Mix well. I use a regular muffin pan and divide the mixture into 12 lightly sprayed muffin cups. Chop up the sausages and put desired amount into each muffin cup. Bake at 425 for 12-18 minutes or until it is set.

hi Kelly, this is not my recipe...it was copied from the main board i think??.... Muffin Frittats INGREDIENTS: 2 CUPS CHOPPED VEGGIES 1 TSP. COOKING OIL 12 EGGS 1/2 CUP MILK ( I USED SOY MILK) 1 TBS. FLOUR SALT & PEPPER TO TASTE 1 TOMATO CHOPPED OR SLICED 1/4 CUP SHREDDED CHEESE NON-STICK COOKING SPRAY Pre-heat the oven to 325 degrees & spray a 12-cup muffin pan with non-stick spray. Set aside. Chop enough veggies to equal 2 CUPS. (Use any veggie combo that you like, I used onions mushrooms and bell peppers) Heat skillet over medium heat and add the oil. (I used olive oil)Add the veggies and saute` until veggies are soft. Divide the veggies among the 12 muffin cups. Break eggs into large bowl and wwhisk. Add the milk, flour, salt and pepper and whisk some more. Pour Egg mixture into the 12 muffin cups, filling 3/4 full. Bake at 325 degree for 25 minutes, frittatas will rise. Remove from oven and set the oven to broiler. Top each muffin with tomato and sprinkle eith cheese. Place under broiler until cheese melts. Let muffins rest a few minutes and then remove from pan with fork. One muffin is one serving. I have added some unflavored protein powder to this to up the protein. These will keep for several days in the fridge. Just don't add the tomato and cheese until your ready to eat. It re-heats very well!!!!

Hi Kelly - I know you were looking for an egg recipe quite a while ago, but I wanted to share this YUMMY recipe that works well for just a family meal OR is really nice for a brunch. 1 Dozen Eggs 1 Pkg Cream Cheese, softened A few Green Onions 1 Cup Chopped Ham 1 1/2 Cup Grated Cheddar Cheese Dijon Mustard Preheat oven to 350. Mix the eggs with the cream cheese until there are small lumps throughout. Line a bar pan/cookie sheet (with sides) with parchment paper or spray very well with cooking spray. Pour egg mixture onto pan and bake 11-18 minutes or until eggs are cooked. While it's baking, dice green onions, ham and cheese. When egg is cooked, spread with some dijon mustard and sprinkle ham, cheese and onions on top. Roll the entire thing creating a loaf. Slice into 1 inch pieces and serve with cottage cheese. It is SOOOO yummy and SOOOO easy. Also, I've made this for dinner and filled the egg mixture with beans, taco meat, cheese, salsa & avocado. You can do just about anything with the egg base. Enjoy.
