Crock Pot Recipies
Simple is all I cook!!! I just found a crock pot recipe called Lime Garlic Chicken. It sounds so delicious and goes as follows:
1 package (1 lb & 4oz) bone-in skinless chicken thighs
1/4 cup fresh lime juice (2 limes)
1 1/2 cups chicken broth
2 cloves garlic, finely chopped
1/2 teaspoon pepper
2 tablespoons butter
add chopped fresh parsley or cilantro (if desired)
Place chicken in a 3 to 4 quart crock pot. Add remaining ingredients except for parsley / cilantro.
Cover and cook on low heat setting 8 to 10 hours.
Remove chicken from cooker. Spoon any remaining juice over chicken. Garnish with parsley or cilantro.
I haven't tried this, but I plan on cooking it this Sunday. I will let you know how it turns out (if you don't try it before me!).
I make a fabulous beef stroganoff recipe.
Take 1-2lbs round or flank steak and cut in strips 1/2in x3in.
Pepper (don't salt) and brown in skillet, drain most of grease, then sprinkle flour on meat and keep browning until flour abosrbs extra fluid.
Dump meat in crock-pot
Add 2cans Healthy Choice Cream of Mushroom Soup
1can Beef Broth
1can French Onion Soup Mix
Cook on Low for 8hrs or until meat is tender
30min prior to eating add one can sliced mushrooms (drained) and 8oz light sour cream.
My family eats this over rice, but I eat it plan and love it.

Crock-Pot Sour Cream Chicken
3-4 skinless, boneless chicken breasts (frozen)
1 can reduced fat cream of mushroom soup
16 oz sour cream, fat free or light
1 package onion soup mix or Onion/Mushroom soup mix.
H2O to thin out sauce, if needed.
Cook in crock pot for 5-7 hours on low or 3-5 hours on high.
*Add whole small red potatoes and use the sauce as gravy.
*Put over noodles and tastes just like stroganoff.
Crock-Pot Salsa Chicken
3-4 skinless boneless chicken breasts (frozen)
1 package taco seasoning mix
1 16 oz jar salsa (Pace's Lime & Garlic)
½ cup of sour cream
I also add a little water.
Lightly spray crock pot with non-stick cooking spray. Place the chicken breasts in the bottom of the crock pot. Then season with taco seasoning package. Add the salsa over the top. Cover- cook on low for 6-8 hours. Remove the chicken from crock pot and sit to the side. Stir in the sour cream with the salsa left in the pot. Serve the chicken with the salsa sauce. Sprinkle your favorite taco seasons over the top like cheese and olives. I served over some rice.

Hi Will...I have a great low carb stew recipe:
5 quart crock pot
(or adapt recipe for smaller if necessary!)
2lb chuck roast (cut into chunks)
4 medium turnips (peeled and cubed)
1 lb bag of baby carrots
frozen peas, beans and corn as desired
put all of the above in the crock pot
pour 1 LARGE bottle of V-8 to fill to the top
salt and pepper (or any other seasonings you like) to taste.
I usually do this early in the morning before work....put in on low to cook all day then turn it to high for an hour when I get home...depending on how late I get there...you'll have to experiment...

I have a super simple but soooo delicious chicken recipe. I put the chicken in the crockpot frozen and it is ready by dinner time.
3-4 pieces frozen boneless skinless chicken breasts
1 can cream of chicken
1/2 can of water from cream of chicken can
1 onion quartered
garlic, salt and pepper to taste.
celery is optional
Throw it all in the crockpot in the morning. By dinnertime the chicken is falling apart. I serve it on top of buttered egg noodles. It tastes similar to chicken and dumplings.

Hi Will,
I was collecting some recipes for myself and found your profile here. I was wondering how you are doing now? You are about what- 4.5 mon. post op? It sounds as tho you had a few minor comps in surgery and slower recovery. Its funny that morphine did nothing for you but demorol worked a little. I am alergic to many many pain relievers. Morphine tho I can have in very small dose. Demorol sent me directly to anaphylactic shock. That was why I was sooooo hesitant to have the surgery. I was "resurrected" in an emergency room (in 1997) durring a routine operation because of demorol and after that death experience it scared me for a good number of years. I finally gave in and decided to have wt.loss surgery. I am only 1 mon. out now and down 27 lbs.
Anyway, I've rattled enough. I have no idea why you interest me but....was just curious about how you are progressing. I will hope to hear from you or check back with your profile and hope to see it updated soon.
