I know that I am newly post-op, but I have got this craving for peanut butter. I am afraid to have it just by itself, so a friend called and suggested I make peanut butter cookies, but use splenda instead of sugar. Has anyone done this, or does anyone have a recipe for it they would not mind sharing?? Melissa

It is so simple: 1 cup Splenda 1 cup Peanut Butter 1 egg I swear, it sounds too easy to be true, but after a curious night in college we made about 15 different PB cookie recipes, and this one won. (though, we did use real sugar). P.S. I haven't a clue if they would be ok to eat. You might want to consult the main board, they have a lot of ppl further out and its a much more active board.

The recipe just listed would probably be okay, as long as you don't overdo it. I'm 16 months postop, and I like a little more texture in my food. This is how I make PB cookies. 1 c peanut butter 1 c splenda 1 tsp vanilla 1 c rolled oats 1 egg mix all together with your hands. Roll into balls, place on a greased baking sheet, and flatten with a fork dipped in Splenda. Bake at 350 degrees for 8-12 minutes, or until golden on the bottom.
