BAKED RICOTTA 1lb. Ricotta Cheese 4 eggs 5-6 packets of Splenda Rind & juice of 1/3 lemon 1/4 jigger of rum In large bowl, blend cheese, sugar and eggs. Add lemon juice and grated rind. Add rum. Pour into small baking pan (ungreased) Bake at 325 deg. for 45 minutes. ms jay I never had this but, it seemed like a good soft recipe. I enjoyed eating eggs, cheese, cream of rice, mashed potatoes, meatballs, pizza sauce on a tortilla with mozerella cheese.(Heat in oven for 4 min. or until cheese melts),and mushroom and cheese omelets . I also liked Lipton noodle soup with saltines softened in it. I never ate alot during this stage because I had no appetite. The canned spaghetti and ravioli also was soft. I ate no more than an 1/8 to a fourth of a cup at a time.

I'm really liking scrambled eggs, cheese chewed to a pulp, and this shrimp junk I've been making (two tablespoon sof cottage cheese, a miniscule amount of ****tail sauce, and some minced shrimp) Be careful with the ****tail sauce, 11 grams of sugar per 1/4 cup....but I only put like half a tablesoon or less in. Sugar free banana pudding is great too!
