Looking for fudge recipe

Hi All, This is my first time on this board and am hoping you can help. I am in need of a recipe for suger free peanut butter fudge. I tried splenda.com but no luck. I have never even made regular fudge so this should be interesting. Thank You, Jolene

Hi Jolene, I keep a small file of recipes on index cards and looked thru them for you. Here are 3 recipes calling for protein powder, the first two came from www.lowcarbluxury.com; unfortunately, I have no idea where i got the other one. I hope you have fun experimenting with recipes until you find the one you are looking for. Good luck, Sue Nutty Fudge Bars (8 Bars) 2 1/3 cup vanilla protein powder 1 ounce square unsweetened chocolate 1/2 cup butter 4 ounces cream cheese 1 ounce chopped walnuts 1 teaspoon vanilla extract 1 teaspoon peanut butter 1/4 cup splenda Melt butter, cream cheese, peanut butter, and chocolate. Mix well. Add splenda and vanilla, mix well again. Now add nuts and portein powder and mix. Mix well so that the powder dissolves into the mixture. Place in baking pan, flatten and refrigerate, a rectangle casserole dish works well here. Cut into 8 bars. **** Peanut Butter Protein Bars (4 Bars) 2 tablespoons no-sugar-added peanut butter 2 tablespoons butter, melted 1/2 teaspoon liquid artificial sweetner 1/4 cup splenda 1 scoop (about 1/3 cup) vanilla praline designer whey protein powder Melt peanut butter and butter in microwave or double boiler. Mix in the sweetners. Add protein powder and stir until it forms a ball. Roll and knead a bit. Separate into even portions. Refrigerate until firm. **** Protein Peanut Butter Fudge (20 pieces) 1 stick of butter (1/2 cup) 1/2 cup peanut butter 2 ounces cream cheese 1 cup splenda 2 scoops vanilla flavored protein designer whey powder Melt butter and peanut butter in microwave on high for about 2 minutes. Stir. Microwave another minute. Remove and stir in cream cheese until dissolved. Stir in splenda, then stir in protein powder. Grease a 6 1/2 inch square container and line with waxed paper. Pour mixture into the container. Cool, cut into 20 1-inch pieces. ****

hi jolene, sorry probably too late to make this for christmas......but i found this posted by Teri? i think.... Peanut Butter Chocolate Fudge Ingredients: 8 oz cream cheese 1 cup Splenda 1 oz. unsweetened baker's chocolate 1/4 cup heavy cream 4 teaspoons peanut butter Melt cream cheese and peanut butter in microwave for approx 2 minutes, stopping and stirring at 1 minute intervals. Melt chocolate in separate bowl until creamy. Combine chocolate with cream cheese mixture and whisk in Splenda and cream. Pour into buttered glass pan and chill at least 4 hours. Cut in squares and enjoy. (This recipe yields a more "gooey" fudge than traditional fudge, but if you want more uniform squares, place pan in freezer for 30 minutes before cutting.) Cut into 16 pieces -- 3.8 grams net carbohydrate per piece. Teri good luck, Audra
