Sugar-Free (non-chocolate) Cake Recipe??
I have an almost 10-year old stepson who has AD/HD; his doctor has had him following a no-sugar diet for the past year to help with controlling his hyperactive symptoms.
I will be baking his birthday cake for his party next Saturday, and am having problems finding a sugar-free (made with Splenda or other sugar replacements) cake recipe besides chocolate, angel food or carrot cake, none of which he is particularly fond of. Do any of you have a kid-friendly cake recipe that contains no sugar? Thanks for any help!

I found one that is called a Fruit ****tail snack cake. I don't see why you couldn't make a larger batch and fix it up for a birthday cake.
1 large egg
1 cup Splenda Granular
15 oz ca of fruit ****tail (light syrup)(less 2 tbsps juice)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/4 c all-purpose flour
1 tsp vanilla extract
1. Preheat oven to 325. Coat an 8" sq pan with non-stick cooking spray
2. Beat together: egg, splenda, fruit ****tail with a hand mixer until smooth
3. Sift together dry ingredients
4. Fold dry ingredients into fruit ****tail mixture with a whisk, then add vanilla
5. Pour into prepared pan. Bake for 30-35 minutes or until top springs back when touched. Cool & serve
6. Can add whipped topping to individual slices (not included in calories, etc count below)
Serves nine
Per serving:
110 Calories
23 g Carbs
3 g Protein
1 g Fat
1 g Fiber
200 milligrams Sodium

i know that sweet n low brand has sugar free cake mixes and frosting mixes at the grocery stores...i'm not sure what flavors they have or how they taste but i have seen them. i've been lucky...my birthday is in april so we usually just have fresh fruit with whipped cream on it for me.
