Anyone have a good reciept for salmon patties? Also, any ideas for using canned salmon would be helpful! Thanks!

My mom always put an egg and a little onion in her pink salmon patties. She fries hers but I thought about trying to spray pam on a baking sheet and cooking it that way. Or you could put some olive oil in a skillet and cook in oven too. I like to use tuna that way too. Jane

I may have even found this on this board. Can't remember. I've not tried it yet, but it sure sounded yummy!! You could make it with reduced fat cream cheese and save some calories, I'm sure. Mary Fantastic Salmon Loaf (Salmon Party Log) 1 (1 1/2 lb) can salmon (use canned always) 1 (8 ounce) package cream cheese, softened 1 tablespoon lemon juice 2 teaspoons grated onions 1 teaspoon prepared horseradish 1/4 teaspoon salt 1/4 teaspoon liquid smoke 1/2 cup chopped pecans (optional) 3 tablespoons snipped parsley (dried works best) Drain and flake salmon, removing skin and bones. Combine salmon with next six ingredients; mix thoroughly. Chill several hours. Combine pecans and parsley (or, just use parsley, I never use pecans). Shape salmon mix in 8x2 inch log; roll in nut mix; chill well. Serve with Crackers. use the egg......combine with cornmeal...salt and pepper ....fry........YUMMY kristi

Thanks everyone for your replies! I actually used one egg, some onion, celery, and a teaspoon of bread crumbs. Then made patties and baked them at 350 for 30 minutes. I am sure they were done sooner but I wanted them crispy. I can't fry anything, it makes me sick! thanks again for taking the time to reply!
