my sister and i had rny and her birthday is coming. i would like for her to have a good low sugar chocolate birthday cake. anyone have any good recipes for a cake?? thanks in advance!!!

hi, here is a cake recipe that i copied down from a site called www.theroadtothin.com this cake had been praised here on the OH message boards. then, i will type a sf frosting recipe that i also copied down, unfortunately, i didn't make a note of where i got it from. hope this helps, sue Cake 4 ounces unsweetened baking chocolate 1/2 cup butter 2 cups splenda 3 large eggs 1/2 cup cocoa powder 1 1/2 teaspoons vanilla extract Preheat oven to 375 degrees. Grease an 8-inch round pan. Cut parchment paper to fit the bottom of the pan. Grease the top of the paper. Melt chocolate and butter. Whisk til smooth. Add vanilla. Set aside to cool. Add eggs, one at a time. Beat well. Add splenda. Sift in cocoa, mix lightly. Pour in pan and bake in the center of the oven for 20 minutes or until a light crust is formed around the edges. Cool on a rack for 5 minutes. Loosen the cake around the edges with a knife and invert on a serving plate. Cool before serving. Top with cool whip. Sugar Free Frosting (makes enough to frost a 9x13 cake or 1 2-layer cake) Use any flavor pudding mix 1 (1.4 ounce) package SF instant pudding mix 1 1/4 cup milk 1 8-ounce package FF cream cheese 1 8-ounce container 'free' whipped topping, thawed In a bowl, combine pudding ix and milk. Mix well and let stand until thickened. In a large bowl, beat the cream cheese until smooth. Add pudding and mix well. Fold in cool whip.
