Egg Muffins

4 eggs, 8 egg whites or 1 cup egg beaters 4 strips turkey bacon, cooked and chopped into bits 1/2 c. lowfat part skim mozzarella cheese - shredded 1 tsp. chopped chives or parsley - for color 1/4 c.chopped fine onion 1/8 tsp garlic powder Salt & Pepper Stir together all the ingredients til well mixed. Pour into 12 well sprayed mini muffin pans - bake 375 for 15 minutes til golden & set. These can be re heated easily and frozen too. They are great while in stage three and when in stage four you could add 1/2 c each chopped mushrooms and red & peppers too ( then it would make about 18 muffins ) One muffin when made with whole eggs is= 40 calories , 6 g protein Plan on 2 or 3 for a serving. These taste like a mini quiche . Joyce Stewart

I just tried these! I ommited the chives and spices and added taco seasoning. They taste like breakfast burrito filling! Thanks for the recipe!
