carrot cake?
I'm looking for a nummy-licious carrot cake recipe I can eat post-op. Sugar free is the most important criterion, as y'all know.
I found a delightful-looking "cream cheese" frosting recipe on these very pages, too, but if your recipe also includes one of these, please feel free to add it. But it's the carrot cake I'm truly craving....

These are carrot muffins..... Theses are just heavenly without a frosting.
* 1 egg white
* ¼ cup packed grated carrots
* 1-2 packets Splenda, to taste
* ¼ cup oat flour made from grinding oatmeal in blender or food processor
* ¼ capful coconut extract
* ½ teaspoon baking powder**
* dash or two of cinnamon
Mix all together and place in mini muffin tins. Bake at 375 degrees about 9 minutes or until done.

This is the best one I've found so far. It comes from Lynette Bordine's "Desserts and More" cookbook that was made specifically for WLS pateints.
Moist and Rich Carrot Cake
2 C. Splenda
1C. Lighter Bake or unsw. applesauce
4 egg whites
2 tsp. vanilla
2 1/4 C. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
3 C. grated carrots
1 C. raisins
1 C. chopped walnuts
(I add) 1 can crushed pineapple, drained
Frosting:
6 oz. light cream cheese
1/2 C. Splenda
4 oz. Cool Whip Lite
1/2 tsp. vanilla
Preheat over to 375. Coat a 9x13" baking pan with cooking spray. In a mixing bowl, beat Splenda, Lighter Bake (or applesauce), egg whites, and vanilla. In another bowl, combie flour, baking soda, cinnamon, nutmeg and salt. Add to Lighter Bake mixture. Blend well. Stir in carrots, raisins and nuts. Spread batter into pan and bake for 25-35 minutes or until wooden puck comes out clean. Cool on rack. Spread evenly with frosting after cooled.
For frosting, whip all ingredients together and spread on cooled cake. For garnish, toast some sf coconut and sprinkle on top of cake along with some grated carrots.
