hi kacy, i do have this recipe written down on an index card. one night i went looking for recipes as my hair was beginning to fall out and unfortunately i have no idea where i got it from or who to credit for this recipe. i have not tried it yet but it sounded good to me. sue Broccoli Cheese Soup 1 1/2 pounds fresh broccoli 2 cups water 3/4 tsp. salt 1/2 cup cornstarch mixed with 1 cup water 1 pint of half & half 1 pound velveeta salt and pepper to taste Steam broccoli until tender. Put 1/2 & 1/2 and water in top of a double boiler. Add cheese and salt and pepper. Heat until cheese is melted. Add broccoli. Mix cornstarch and water in small bowl. Stir into cheese mixture in double boiler and heat over simmering water until soup thickens.

if u find a recipe u like try adding a packet or 2 of white gravy mix to it. it makes it creamier and tastes o so good. well i did this b4 surgery so im not sure how well this would sit post op lisa

The recipe that is above sounds almost like mine except I use chicken broth instead of water. Try that. It is very good!! Deb

This really tastes like it's made with cream and butter! No one ever believes this is a healthy recipe! * 1 small onion, chopped * 3-4 medium zucchini or 3 broccoli crowns * 5 cups no salt added vegetable stock or water * ½ cup oats * 2 tablespoons parsley * Mrs. Dash, to taste Sauté onion until translucent. (Note: You may do this either in a nonstick pan, relying upon the natural moisture of the onion, or you may add a bit of nsa broth.) Add remaining ingredients. Simmer 30 minutes or until vegetables are cooked. Run through blender until smooth and serve. I like some chunks in my cream of broccoli soup, so I take out some of the broccoli before I puree and then add them back after.
