looking for salmon patty recipe

These are one of my "specialties"
1 Can of Pink Salmon ( I get the brand with the black label-Pillar Rock?)
1 egg
Some Progeresso brand Italian Bread Crumbs
1) Clean and debone the canned salmon, (I add this for those who never dealt with canned salmon before)
2) In a bowl chop salmon really fine (salom is already rather soft)
Add in egg, and some bread crumbs.
Don't add too many bread crumbs, the idea is to make the ingredients stick together. Too many crumbs will dry out the patties.
3) Shape into desired size patties. Brown in frying pan w/Pam cooking spray till golden brown on each side.

This is not a salmon patty,but it sounds great.
Fantastic Salmon Loaf (Salmon Party Log)
1 (1 1/2 lb) can salmon (use canned always)
1 (8 ounce) package cream cheese, softened
1 tablespoon lemon juice
2 teaspoons grated onions
1 teaspoon prepared horseradish
1/4 teaspoon salt
1/4 teaspoon liquid smoke
1/2 cup chopped pecans (optional)
3 tablespoons snipped parsley (dried works best)
Drain and flake salmon, removing skin and bones.
Combine salmon with next six ingredients; mix thoroughly.
Chill several hours.
Combine pecans and parsley (or, just use parsley, I never use pecans).
Shape salmon mix in 8x2 inch log; roll in nut mix; chill well.
Serve with Crackers.

Funny you should ask...I just had a similar craving, and made these over the weekend (most are frozen now, since I'm not technically eating solid food yet). I used an amazing smoked salmon we bought at a farmers' market near our house, where you buy a pound at a time (a pound of smoked salmon, however yummy, will outlast us under normal cir****tances).
Salmon Patties
1 14-oz can salmon (or 10-12 ounces smoked salmon)
1 egg white, lightly beaten
1-2 Tablespoons Italian bread crumbs
1 Tablespoon all-purpose seafood seasoning (such as Old Bay)
A few drops hot sauce, such as Tabasco or even chili sesame oil
1 Tablespoon fresh flat-leaf parsley (chopped) or 1 teaspoon dried parsley
salt and pepper
1 Tablespoon vegetable oil, for cooking
Combine salmon, egg white, bread crumbs, Old Bay, hot sauce, parsley, salt and pepper. Form into teeny little patties (I got 10 patties from this much stuff) about 3/4 to 1 inch thick.
Add vegetable oil to a hot frypan (over medium-high heat). Add patties and cook 2-3 minutes per side until golden brown and cooked through.
I'm looking for an interesting sauce to serve with these. One I found (that I'm not sure about) is a citrus mayonnaise:
Citrus Mayonnaise:
2 Tablespoons fat-free mayonnaise
1 Tablespoon fat-free milk
1 Tablespoon fresh lime juice
1/2 teaspoon grated lime rind
1/8 teaspoon ground cumin
Combine all ingredients in a small bowl. Cover and chill.

i don't use a recipe...
canned salmon ( i take the skin out, but leave the bones in, the do not hurt you & kids love it!)
crushed saltine crackers
eggs to moisten
make into patties
dip into cornmeal
fry till brown
voila!
you can add onion to the patties & salt & pepper, if ya like.
this is not fancy, but dang!! they are goooooood!! lol!
