Zucchini "lasagna"
I just made this recipe for dinner. It's one I found in the "Eating Well After Weight Loss Surgery" cookbook but I deleted a lot of stuff. Here it is...it was yummy!
2 medium zucchini
1.5 c marinara (I used Newman's own....best I could find w/low sugar no fat, etc...)
10 tbs light ricotta (do they make fat free? I couldn't find any)
2c fat free mozzarella
garlic powder
italian seasoning
salt & pepper to taste
Dice zucchini. Place in pan. Cover with sauce, ricotta and cheese, repeat.
Bake at 400 for 30 minutes. Broil for last five to brown mozzarella.
