Beer Bread - Less Carbs, More Protein!

New Recipe, And this one was "Custom Made." Kiki Pixley posted a question about "Beer Bread," and I was reminded just how much I used to love it. I hadn't had any in years. In Texas, when I had it/them, They were called Beer Biscuits, and the recipe was super easy- Bis-quick and beer, then bake and Voila! That's not very WLS friendly so I set off to find a More Protein Packed, less Processed White Carb Version. And with the batch last Night? After 4 so-so attempts, Each better than the one before it- Voila! Protein Enriched, Low-Carb, Beer Bread! (Biscuits/Rolls) Yes, I know this is not a great food, And it could even be thought of as a "Gateway Food" That would lead to worse choices And eventually Heroin addiction! But, for a taste treat that is still relatively a good food choice, I think it fits the Bill. I have to up front, give some of the credit to Dame T. Who "turned me on" to Krusteaz ®, CarbSimple ? Mixes and products. Thanks Toots! ("Turned Me On," What a druggie term!) (This May lead to Heroin Addiction) So, Yes, the basis of this recipe is a "Mix," But Much adjusting. Sort of like riding a bicycle using a hand to crank the pedals. Here Goes- "Kiki's Protein Infused Beer Bread!" Ingredients- 1 box of Krusteaz ®, CarbSimple ? Country White Bread Mix. 1 cup of Krusteaz ®, CarbSimple ? Pancake Mix 2 Eggs & a 3rd Egg White 1 scoop of Un-Jury Un-Flavored Protein Powder .......(could use any Un-flavored Protein powder.) .......(I liked the Un-Jury slightly better than the Gen-Soy) 1 ½ Teaspoons of Baking Powder 1 ½ cups of Un-filtered Hefeweizen (Wheat Beer) .......(Could be any beer, but I'm a Flavor Junkie!) .......(Junkie? Darn Those drugs!) .......(you'll have a bit of beer left if your bottles are the same as mine) .......(but hold it back, it comes into play later) ¼ Teaspoon of Butter Flavored Popcorn Salt 1 Teaspoon of Honey 1 Teaspoon of Splenda To Start- Pre-Heat Oven to 400 degrees. Bring the eggs to room temp. Place them in a bowl with some tepid water. Slightly Warm the beer in the micro-wave. (Think Baby bottle warm, Body Temp) Then- Throw away Bread and Pancake Mix instructions. They are of No Use Now! There is a small Yeast packet in the Bread Mix. Set it aside, it is used. Combine all of the dry ingredients Both mixes, Protein and Baking powders and salt, In a large mixing bowl and sift them together. In another bowl- Beat the eggs and add the honey. Beat in the Yeast Packet And set aside this mixture for about 5 minutes To activate the yeast. While that is starting to activate Spray muffin tins or mini loaf pans with no-stick spray. After egg/yeast goo has started to activate- Mix in the warm beer. Now add the wet into the dry and mix thoroughly. The "batter" should be thicker than cake /pancakes But too wet to handle. This is where you can add the "leftover" beer Until the consistency is where it is spoon-able But it levels out in the tins. As soon as it is mixed, Spoon into the muffin tins/ small loaf pans. Only ¾ full, it rises a good deal. This will make 18 standard muffins, or 16 - 3"x 2 ½ " mini-loaves, or 8 - 3"x5" little loaves. Just before popping them in the oven, Spray the tops with Butter Flavored Cooking Spray. Once in the Oven, reduce the heat to 375 degrees. 10 minutes or until golden brown. You can also check with a toothpick as you would a cake. Now for the Nutrition info- Each muffin contains- Calories - Approx. 185 10 gms - Protein 7gms - Dietary Fiber 11.5gms - Total Carbs (4.5gms - Net Carbs) 5.5gms Fat < .5gms Sugars 1gm Sugar Alcohol I fed these to "Civilians" and they had No Idea That it had more than twice the Protein than Net Carbs. I was even asked- "You can eat these?" Great with "I Can't Believe It's Not Butter Spray" Or if you are really wanting to be decadent, And can spare the extra 70 calories- Fleischmann's Olive Oil Spread has- Saturated fat 1.5 g, Polyunsaturated fat 4.5, Monounsaturated fat 2.5 g. 0 Trans-Fat It's not the best for you, But in comparison to Margarine or Butter It's not like you're having a Krispy Crème Doughnut- (It just Feels Like It!) This is Clearly a "Gateway" Food. If "Company" is coming, And you want a taste treat That seems like pure decadence But ends up being pretty good At giving you a balance of nutrients- Go for it.
