Ok, I'm one of those people fortunate/unfortunate enough To dump on the least amount of sugar. As a result, Sweets, of any kind hold very little appeal for me. I'm also one to try and "sneak" protein into nearly every type of food. I'm also a flavor junkie! I can't eat much So I want every Bite to make my Tongue do a little Happy Dance! I also LOVE to cook! And I'm a nerdy, chemist in the kitchen, Sort of Alton Brown Meets Mario Batali Meets Frankenstien! So, it is with great pride and much joy that I bring you the results of my Mad Scientist Experiments in the form of a recipe, That tastes like a "no no," but is actually Packed with Protein And Flavor, Flavor, Flavor!!!! Dx's Chunky Monkey Banana-Nut Bread! I have to up front, give some of the credit to Dame T. Who "turned me on" to Krusteaz ®, CarbSimple ? Mixes and products. Thanks Toots! ("Turned Me On," What a druggie term!) So, Yes, the basis of this recipe is a "Mix," But much adjusting, to the point of making it un-recognizable. Here Goes- Ingredients- 1 box of Krusteaz ®, CarbSimple ? Banana Nut Muffin Mix 1 Large, Very Ripe Banana 4 eggs (the mix calls for 2 with two-thirds cup of water but Ignore that) 1 scoop of Gen Soy® Soy Protein Powder ¼ cup of Textured Vegetable Protein ½ cup of chopped Pecans ¼ cup of Good Sense® Nutty Bananas? crushed medium fine (Dehydrated Banana Chips) 1 teaspoon baking powder ¼ teaspoon of Vanilla Extract ¼ teaspoon of Imitation Butter flavor extract ¼ teaspoon of Imitation Banana flavor extract 3 tablespoons of Splenda 2 tablespoons of I Can't Believe It's Not Butter, melted (I know, BAD! Fats, but flavor!) ¼ cup of Low Fat Butter Milk (Could use just milk, but the Acid gives the Baking powder more "Rise") ¼ cup of skim Milk 2 Heaping tablespoons of Flax Seed Meal ½ pinch of ground dry ginger Start by soaking the Textured Vegetable Protein in the skim Milk And Imitation Flavorings in a small bowl (Warm slightly in Microwave to speed up Absorption) Mash the banana and drop into large mixing bowl Add eggs and beat with mixer until smooth Beat in remaining wet ingredients, holding out ½ of the Butter Milk. Mix all of the dry ingredient together Beat them into the egg/banana mixture Then add the Nuts, Crushed Banana Chips and softened TVP Beat entire mixture and add the Butter milk as needed to bring Batter to normal "cake batter" consistency. Could vary depending on Humidity, altitude, the way you're holding your mouth, etc..... Into two small Loaf Pans, sprayed with baking No-Stick Spray Divide the batter equally. Place in pre-Heated 325 oven on Bake. Once it has risen and just a tooth pick Can go into the center and come out clean Spray the tops of the loaves With a little Butter Flavor Cooking spray Turn the Oven to Convection 400 and Return them to the oven for 2 minutes Or until tops are golden brown. Turn out of Loaf Pans and let cool on rack. Slice (about ½" slices) when cool just the servings that are to be eaten. This will keep it from drying out. Serve with a small smear of Fat Free Cream Cheese. Here's the numbers- (Approx.) (Don't flame me for the I Can't Believe It's Not Butter It only adds 20gms of fat to the whole batch- about - .7gs of fat per slice) 220 gms Total Carbs in the whole batch 230 gms of Protein In Whole Batch 60 gms of Fat In whole Batch Makes Approx. 26 Slices- Per Slice? 8 gms of Carbs 9 gms of Protein (With Fat Free Cream Cheese- 11 gms Protein!) 2 gms of Fat Tastes Great! And for a Desert Bread to have More Protein Than Carbs?!?! Wonderful!!! I've been serving it to my students who have no idea that it's Sugar Free, High Protein, etc... Had to share! Best Wishes- Dx
