Low Carb Chicken Parmesan
(Breading)
2 bags of pig skins crushed as fine as you can get them - powdery is what you are shooting for
1 container of grated parmesan cheese
1 pinch of salt and pepper
Mix together and put in a cake pan for easy breading of your chicken.
Get 4 large boneless, skinless chicken breasts, then cut each on in half long ways, and slice each of those in half long ways. (so 1 breast gives you 4 long skinny pieces of chicken)
(Dip for the chicken)
3 large eggs
1.5 cup of heavy whipping cream
Wisk together with a fork.
Dip chicken in egg/cream mix and bread well covering both sides.
On the stove, heat up a pan with about 1 inch deep light olive oil until just before smoking.
(This is one reason you made thin pieces of chicken - they fry faster)
Fry each piece of chicken on both sides until golden brown and the inside chicken is white (no pink!)
Change oil frequently - after about 3 batches of chicken, the oil will become dark.
Set aside the chicken.
Grab a few oven safe baking pans/cookie sheets, etc. Place the chicken in a single layer, and top each piece with a thin layer of tomato paste. Sprinkle lavish amounts of mozzarella cheese on top of the tomato paste on each piece of chicken. Bake at 350 until the cheese is melted.
Try not to inhale the whole batch at once (lol).
