I made a copy of a peanut butter cookie recipe about 2 weeks ago, made with peanut butter and splenda, no flour. Does anyone have it available, my DH threw my copy away. I am also going to post this to the recipe board. Dana Lap RNY 2-21-05 260/238.8/196.4/130???

Hey Dana! A friend of mine from the Bama Board gave me this one. Hope you try it! They are AWESOME! Randall Lindy's Peanut Butter Balls 1 1/4 cup peanut butter 1 cup Splenda 1 egg 3-4 tablespoons GROUND flax seeds Mix together the PB, egg, & Splenda, then add the flax and mix together well. Roll into small balls. Bite sized works for us!! You may choose to flatten with a fork & criss cross, but they don't hold up as well due to the Splenda. * Bake at 350 degrees for 13-15 minutes. Enjoy your health!! These cookies are high protein and the flax in them is sooo good for you. **But, you DO NOT have to add the flax. If you choose not to, just use 1 cup PB instead of 1 1/4c."

I think the one I use is from Food Network but got it here. 1 cup PB 1 cup Splenda 1 egg 1 tsp. vanilla Mix, spoon out on parchment paper, smash them down with the trademark cross fork marks, bake at 350 degrees for 10-12 minutes. Makes 12 cookies. I've made these several times and have experimented. I have found that I like them a lot better with only 1/2 cup Splenda and they are plenty sweet. I also use Egg Beaters instead of the egg to cut out a little fat and I like the crunchy peanut butter best. If you bake them right at 9-10 minutes they are not as crumbly. I gave some of these to my dad for Father's day and he really liked them. Enjoy! Angie 308.5/217.5/158
