Italian peasant soup!!! AWESOME! Make your taste buds scream
1 lb italian sauage links cut into 1-inch slices
2 med. onions, chopped
6 garlic cloves,chopped
1 lb. boneless skinless chicken breasts, cut in cubes
2 cans great nothern beans, drained (15 oz each)
2 cans chick. broth (14-15 oz each)
2 cans diced tomatoes, UNdrained (14oz)
1 tsp basil
1 tsp oregano
6 cups(or small bag) spinach leaves
shredded/grated parmesan
cook sausage until no longer pink.Drain. Add onions and garlic, saute until tender. Add chicken and coo****il no longer pink. Throw this mixture in a slow cooker/crock pot. Place beans broth, tomatoes, basil and oregano in also and stir. Cook for as long as you like 3-4 hours on high, 5-6 on low. 10 minutes before serving throw in spinach and heat until wilted. Place paresan on top of ind. bowls. ( the spinach makes this soup with the cheese..dont omit) ENJOY!!!!
