Pistachio Ice Cream Dessert
This is a recipe that my kids loved before my surgery and it's just as good made with the sugar-free ingredients. Thank heavens for the new Russell Stover's sugar-free toffee candy!
Pistachio Ice Cream Dessert
30 Ritz crackers
1/2 stick butter (melted)
1/2 C milk
1 qt vanilla no sugar added ice cream
2 boxes pistachio sugar-free pudding
1 lg Cool Whip
1 bag Russell Stover's sugar-free toffee candy
Crush the Ritz crackers; mix with the butter to form a crust on the bottom only of a 9 x 13 pan. Bake for 10 minutes at 350. Mix together the mil**** cream and dry pudding, carefully layer on top of the cracker crust. Spread the Cool Whip over the top. Break up the toffee candy (this is easily done by freezing them first and then beating the crud out of 'em) Sprinkle on top, freeze for a few hours and enjoy!
