Roasted Asparagus

Preheat oven to 425 degrees

Ingredients

1 lb fresh asparagus spears

3 Tbsp fresh grated parmesan cheese

1 Clove minced garlic

3 - 4 Tbsp Olive Oil

Mineral salt

Black pepper

Directions

Cut or break thick ends from asparagus.  Place asparagus in a large bowl and drizzle with olive oil and toss well until all spears are coated.  

Sprinkle with parmesan cheese, minced garlic, salt and pepper...toss again.

Place the spears in a single layer on an oiled cookie sheet and roast for 12 - 15 minutes in a preheated 425 degree oven.

 i only have this once a year if my kids are around/  a broccoli casseole.  it is very good and you can use light mayo and cheese in it. 2 boxes of chopped broccoli(i use fresh or frozen floret) can of mushroom soup,1 cup of grated sharp cheese, 2 tbsp of minced oions, 2 beaten eggs,1 cup of mayo,dalt and pepper to taste.  cooked broccoli make sause and add to broccoli.  pour into a buttered or spray pan and sprinkle with cheese cracker on top,  dot with butter or use a little spray on it.  bake in 350 untill brown about 30 min.

it is just to much for 1 person.  i have not found out how to div the soup more.

Salsa; 1 can Fire Roasted tomatoes, 4-5 fresh serrano chiles (stemmed), 1/2 small white onion, 3 garlic cloves, chopped fresh cilantro and salt. Place the tomatoes, seranno chiles, and garlic in food processor. Place in bowl and add chopped onion, cilantro and salt to taste.

Add a shake of pumpkin pie spices and a spoonful of organic canned pumpkin to your fav vanilla greek yogurt!

I'll still be on mushy food at Thanksgiving, so am not cooking it this year.  I'll add my favorite Thankful recipe.

Give everyone 3 cut out colorful leaves.

Have them write something they are thankful for on each.

Roasted Balsamic Carrots

 

Assortment of heirloom carrots, peeled and cut in half lengthwise

Olive Oil or Cooking Spray

Salt and Pepper

Good Balsamic Vinegar

 

Place carrots in single layer on rimmed baking sheet and drizzle with olive oil (or spray with cooking spray).  Season with salt and pepper.  Cook in a 450 degree oven until browned and tender, approximately 20 minutes.  When still hot, drizzle with balsamic vinegar. 

 Height: 5'7".  HW: 299, Program starting weight: 290, SW: 238, CW 138 - 12 pounds under goal!

Mine would have to be "Aunt Peggy's Sweet potatoes 

warning not WLS friendly I will be making this and trying to tweak it a bit to eliminate some carbs :)

3 cups of sweet potatoes cooked and mashed

3 eggs

1 Cup brown sugar ( I use splenda brown sugar)

1 Cup sugar ( I use 1/2 cup splenda) 

1/2 tsp salt

1/2 Cup Self rising cake flour

1 Tbsp Vanilla

1 Cup pecans

12 Tbsp Butter

1/2 Cup milk

  • Prep 15 min
  • Cook 25 min
  • Ready 40 min
  1. Souffle: Preheat the oven to 400 degrees F. Lightly grease an 8-inch square baking dish.
  2. In a large bowl, combine the sweet potatoes, sugar, eggs, milk, butter, vanilla, and salt. Pour the mixture into the prepared baking dish.
  3. Topping: Combine the brown sugar, butter, flour, and pecans in a separate bowl. Crumble the topping over the sweet potato mixture.
  4. Bake for 20 to 25 minutes, until the topping is golden brown. Serve hot.

Roman Lettuce leaf washed and dried 

1 table spoon of cranberry sauces (chunky is ok)

1/4 cup or less of Shredded turkey breast 

 This recipe is just for one person , 

I make a plate of 12 for guest

My aunt's secret recipe -- mashed potatoes with lite sour cream! I had no idea it was in there, but now there's no way else to make them for me!!
