My recipe is for a sugar-free pumpkin pie.

Ingredients:

1 15 oz can pumpkin
2 eggs
2/3 cup unsweetened soy milk (or unsweetened almond milk)
1/3 cup cream
1 C sugar equivalent from artificial sweetener (zero-carb sweetener such as liquid sucralose preferred)
2 teaspoon cinnamon
1 scant teaspoon nutmeg
1/4 teaspoon ground ginger
Pinch cloves
1/4 t salt

I bake this with a crust made from crushed pecans, artificial sweetener and butter. Super yummy treat!

This year's holiday will be a bit different from last year. I'm a post RNY patient and my husband is a pre-op sleeve patient. He still wants the 'usual/traditional' meal but it's just the two of us this year with restrictions.

I make the Libby's Pumpkin Pie recipe on which is on the pumpkin label BUT here's my bariatric friendly version:

Instead of the sugar, I use Splenda, and increase the cinnamon to 1 TBSP

Then, instead of putting it in a pie crust, I spray the pie pan w/cooking spray and pour the pie mix in and bake as usual.

(I have used the regular Splenda but have not tried the one for baking. My husband likes the Stevia for baking but I don't really care for it.)

I love sweet potatoes roasted in the oven!!

Mashed Cauliflower

1 head cauliflower

1/4 cup low fat sour cream

1 head roasted garlic

salt/pepper to taste

 

Break up cauliflower, use a food processor to break down

cook in microwave for 7-8 min until soft

drain

add roasted garlic and sour cream and mash together

put into baking dish and cook at 350 degrees for 20 min until hot

Mashed cauliflower, so creamy and doesn't weigh you down like mashed potatoes. Very easy, boil cauliflower in stock of your choice till tender, drain and reserve some stock, mash with splash of cream, or reserved stock, add butter, garlic, or whatever is your favorite seasoning. We even put in some Parmesan to thicken it up a bit. Soooo good.

Leftover Turkey "Gumbo" Soup

Ingredients

3 cups turkey or chicken broth

1/2 cup onion, chopped

1/4 cup celery, chopped

1/2 cup green or red bell pepper, chopped

10 oz. baked of frozen, cut okra (or more to your liking)

16 oz. can of diced tomatoes

salt, pepper & Cajun season to taste

1/4 cup of uncooked rice

2 cups leftover, cooked turkey, diced

 

Directions

In a soup pot, heat broth til it boils. Add all the remaining ingredients. cover and cook on low to medium heat about 15 minutes until the rice and veggies are tender.

Calories: 154, Total Fat: 3.1 gm, Total Carbs: 10.3 gm, Protein: 21.4 gm

My favorite recipe is roasted brussels sprouts tossed with olive oil and salt and pepper with garlic and roasted until tender.

My favorite recipe is Roast Maple Pecan Brussel Sprouts.1 1/2 lbs of brussel sprouts

3 tablespoons of olive oil

1/2 teaspoon sea salt

3 Tablespoon of Maple Syrup

1/2 cup of crushed pecans

min everything together and place on a cookie sheet 

bake at 400 F for 30 minutes and

Great giveaway!

Oven roasted Brussels sprouts are my favorite side!  Just trim and cut in half, toss with a little olive oil and S&P and roast in a 400 oven until they are browned, crispy and delicious!

One of my favorite healthy recipes is roasted Brussle sprouts --- I add a few slices of turkey bacon, finely chopped for flavor and use a microplane to grate some fresh nutmeg onto them while they're roasting.  It really brings out the flavor!!
