Watermelon Feta Bites with Basil Olive Oil
Ingredients
- 1/4 cup fresh basil leaves
- 1/4 cup extra virgin olive oil
- watermelon, sliced 1″ thick in squares
- a block of feta cheese, sliced 1/4″ thick in squares
- salt
Instructions
- Remove the basil leaves from the stem and place in boiling water for about 10-15 seconds.
- Remove from the water, place on a paper towel, and pat to dry.
- Blend the basil and olive oil, pulsing until smooth.
- Slice the watermelon and feta, placing the feta on top of the watermelon.
- Drizzle with the basil olive oil mixture.
- Salt and garnish the platter with basil leaves; serve.
