Looking for Poultry Crock Pot Recipes

My wife can't handle ground beef.  I can't handle long stringy noodles.  The crock pot is VERY convenient.  Especially in MN winters with an ACTIVE almost 1-year old!  I'd love to get a few recipes on how to make chicken and/or turkey dishes in the crock pot.  Thanks!

Sometimes I made Chicken Vegetable Soup in my crock pot...I usually bake some chicken in the oven first...Take skin off, and take meat off the bone and cut into pieces...Then in crock pot, pour in some chicken broth, add some fresh veggies of your choice such as cubed up potatoes, green beans, frozen peas, frozen corn, baby lima beans, onions...You can add a can of tomatoes if you want...I cook mine until veggies are done, then I put my chicken in...I always put my meat in last cuz I want it to stay in nice chunks.

Ive also taken chicken like I did in above recipe and layer with potatoes and onions in the crock pot...Then mix a couple cans of cream of chicken soup with some milk and pour over...Sometimes I will take a spoon and move the mixture around so the soup can go down between the potatoes some...You can use whatever cream soups you like or have on hand.

Can also take the chicken and add some barbecue sauce over it, and cook slow.

One of my favorites is southwest chicken. In the bottom mix 1 can black beans and two of corn. Mix with about half a jar (bigger one) of salsa and about a cup of instant brown rice. Put chicken breast on top of that and cover completely with the rest of the salsa. Cook on high 4-6 hours. You can top with a little cheese.

Bacon Ranch Chicken

Ingredients

  • 4 Boneless skinless chicken breasts
  • 2 Tablespoons Real bacon bits
  • 1 Teaspoon Minced garlic
  • 1 Package Ranch dressing mix
  • 1 Can Cream of chicken soup
  • 1 Cup Sour cream
  • Cooked egg noodles

Directions

  1. Step One

    Combine bacon, garlic, ranch dressing mix, soup, and sour cream; mix well.

  2. Step Two

    Pour over chicken in the slow cooker.

  3. Step Three

    Cook on high 3-4 hours.

  4. Step Four

    I then shred the chicken and put back in the pot and then add the egg noodles; mix together.

I LOVE my crockpot!! I put a whole chicken in there with salt, pepper, paprika, garlic powder, onion powder. I turn it on low when I go to bed at night and it is cooked to perfection in the morning. Better than a rotisserie chicken! I usually make 3 meals for my family of 4 out of that. Also I will put frozen boneless breasts in there with a small Amit of water. When they are done, I shred it, then add a pkg of taco seasoning. We have soft chicken tacos with that.
