Need Help with Easy Recipes for Fish

I am trying to incorporate more fish into my diet. I need easy fast recipes for fresh fish cooked any way. I have tried baking and broiling cod and talapia it is very dry and tastless. I think I am overcooking it. But when i cook it less time the fish is not cooked enough and I wind up nuking it and it is disgusting..........

I put the fish in aluminum foil mix a little digon mustard and white wine put it on top and close. (like a envelope packet). Cook 350 for 15 - 20 minutes. Let sit 10 minutes fish should take good and be moist and tender.

I love, love parmesan crusted tilapia. I get the indivual wrapped tilapia, rinse and broil on each side for 3 mins. i spray foil with some pam to help it from sticking. I mix parmesan, butter, mayo and onion powder, garlic powder, pepper and basil. after i broil the fish on each side then i cover it with the cheese mix and broil for 3-5 more minutes until it looks more opaque on the edges.

I have to season mine quite a bit and make some tartar sauce too. But I grill talapia after putting lots of Mrs. dash and some paprika on it. It only takes about 7 min on the grill and its perfect.

Hi there, I usually eat walleye, perch or northern pike (pike must be caught in ice cold water).  I use this mix on all my fresh water fish.

In a bag like for shake & bake mix:\

about a cup of flour

about 1/2 tbls. seasoning salt  (lowreys or HYs )

pepper if you like.

wash your filets and then shake in mixture. 

fry in frying pan using oil (canola or crisco)

I fry my fish until it is golden brown on both sides.  I use vinegar or lemon on it after its cooked.  also good with tartar sauce. 

I like this coating for shore lunches when I am out fishing.  I do a lot of that here in Manitoba.
