 SOMEONE ON THE LAP BAND FORUM SAID THERE IS A RECIPE FOR "LASAGNA' MADE WITH ZUCINNI BUT, I CAN'T FIND IT... DOES ANYONE HAVE IT..THE SITE 'THE WORLD ACCORDING TO EGGFACE  ' I CAN'T FIND IT ON THERE...LUCKY

i don't really have a recipe but what i do is thinly slice zucinni or eggplant then use that to replace the noodles the rest of the recipe would be normal, you may want to use low fat riccota, and mozszerella, maybe groung turkey to replace some or all the ground beef.

 I recently made 'lasagna' using eggplant as the noodles and quinoa in place of the meat. It was delicious. I simply sliced the eggplant as I normally would and cooked them a bit before putting them into the baking dish. that way I was assured that they would be fully cooked. The precooked quinoa was mixed with a little sauce. I layered it just as I would had I been using the real noodles. The die hard "don't mess with my lasagna" people in the family really enjoyed it. Low fat, low carb, vegetarian. Perfect.

I would use eggfaces baked ricotta recipe and put slice eggplant or zucinni in it and it is sooooo good.. I would cook it up a little in a skillet before adding it so it would be cooked well..

I don't technically follow recipes but I do sub zucchini for pasta in lasagna and my lasagna loving daughter in law loves it better than the real stuff.

Slice your zucchini thin. Put in colander with some salt. Let sit and drain for an hour or so. Then rinse and use instead of noodles in whichever lasagna recipe you choose to follow.
