Mexican Meatball Soup

This is one of my Lazy day Crockpot favorites and gets a lot of help from Trader Joe's. Of course you can make everything from scratch or substitute any item for another. I never make this recipe the same way. I always vary it up.

4 cups beef stock.
1 28-oz can diced tomatoes
1 jar salsa 
1 Bag meatballs (I like Trader Joe's, frozen ****tail-sized beef meatballs)*
2 Cups corn, (I like Trader Joe's frozen roasted corn)*
4 carrots, diced
1 onion diced
2 cups diced potatoes (I often use a sweet potato)
1 tsp Cumin
1 tsp Garlic powder (or 2 cloves fresh garlic, minced or pressed)
1 tsp salt
1/2 tsp pepper
* Optional* Cooked spaghettini noodles. Break up and cook separately and add only when serving.

Place all items in crockpot and cook on high for 4 hours or medium for 6-8 hrs.

* Thaw or microwave frozen items first
You can substitute chicken, ground beef or turkey and of course add or subtract whatever vegetables you like.

I just made this with Veggie Patch meatless meatballs just as it is written and it is the bomb.  I'm going to serve it to a friend of mine and see if they know the difference in the meatballs, I don't.  Next time I make it though, I think I'km going to also add some black beans.  This recipe gets a big thumbs up from me.  Thanks for sharing.

Albondigas stew. Sounds good. I am in a group and we are hosting a menu/meal from one country a month. January is Russian and February is lookging Like basque. I'd like to incorporate this recipe later on, with your permission.
