Best Salad Ever!!!

  OK I am not one to eat beans- at all, so I was really surprised when I tried this salad over at my sister's house and it was so delicious!  I bet that I make it at least once a week now.  I shared this with the Kingston group over the summer and promised to post the recipe, but then went on vacation.  So here it finally is!!  
Tuscan Chicken Salad- 4 servings, 428 cal per serving (but in reality you eat alot less than 1 serving, so *****ally knows the cal per serving) Taken from: http://www.weightlossforall.com/1200-calorie-diet-sample.htm

1- 15 ounce can of cannellini beans rinced and drained
2 1/2 cups of diced cooked chicken breast
1 1/2 cups diced celery
1/4 cup crumbled feta cheese
1 cup coarsley chopped basil
salt & ground pepper to taste (optional)
2 cups torn romaine lettuce
2 cups radicchio lettuce (I don't use this as I don't like the taste, so I add an different type of lettuce)

Vinaigrette:
3 garlic cloves (less if you like)
1/4 tsp of salt
6 tbs of olive oil
1/4 c white wine vinegar or red wine vinegar
1 tbsp of dijion mustard ( I usually use a little bit less)

Mix up and serve- it really is the best salad ever, b/c you don't taste the beans or the celery, and it is so good for you!!!  Hope you like!
