1 small tub of Cool Whip Free,  1 package of sugar free pudding (any flavor).
Mix the dry pudding powder into the Cool Whip Free then spread it on the cake.  Chocolate is good.

the pre-made sugar free icings are not too bad...they only have vanilla and chocolate but they are pretty good..I find them at Wal-Mart

There is a product by Bell Plantation, Inc., called PB2. It is DEFATTED peanut butter! It comes as a powder, about the consistency of powdered sugar. NUTRITION INFO: 2TBSP/45Cal/5Prot /1.5Fats/5Carbs. It is carried in some groceries (especially if they cater to WEIGHT WATCHERs), weight loss centers (in St Louis area, it's carried at POUNDS AND INCHES AWEIGH, in Chesterfield), AND at the website: http://www.bellplantation.com/

My mother puts it in sugar free Cool Whip and uses it for icing. It is EXCELLENT. Hope you're able to find and use it.

HOW do you make cake from Diet Pepsi? I thought you couldn't bake with Aspertame?

I just put the dry mix in a bowl and add one can od diet pepsi or any other diet soda and mix..Bake as usual..Inserting a toothpick to make sure it is cooked all the way thru.. You can also use a 15 oz. can of pumpkin instead of the soda and bake the same way..."Lucky"
