Protein chocolate tofu pudding
1 package silken tofu, drained
1/4 c. dark unsweetened cocoa
2 tsp vanilla extract, or scrape a bean
1 to 2 scoops chocolate protein powder
Your choice of liquid sweetener to taste- stevia ( a little is allot), splenda, maltitol, agave ( if you don't dump)
add a bit of soy milk if it's too thick
add tofu, sweetener, cocoa and rest of ingredients to high speed blender and whiz till smooth and creamy.

You must be in my head! LOL I just bought some silken tofu (never cooked with it), and this is my plan for it! I only have vanilla protein powder, and want to use that up, so I'll try that and maybe increase the cocoa.
For toppings, I'd probably whip whipping cream and Splenda together - maybe some fresh berries, now that things are starting to come into season. Some chopped nuts, perhaps?
If this recipe works, I'll change up the extracts, too - I LOVE chocolate/mint, raspberry, orange - heck, there's not much that chocolate can't make better!!!!
