Protein cake
I just can't stomach protein drinks, but I can eat protein cake. Here is my recipe:
3/4 c whole wheat pancake mix OR Carbquick (my favorite)
4 scoops protein powder - your choice of flavor
pinch of salt
flavoring (I like to use dry sugar free Jello or Jello pudding or Koolaid)
4 eggs
1/4 cup canola oil
1/4 cup unsweetened applesauce
1/2 cup milk
1/4 to 1/2 cup Torani (or equal) flavoring
Any other liquid flavorings
A small amount of nuts or unsweetened dried fruits if desired
Preheat oven to 325 to 350 degrees.
Spray loaf pan with PAM baking spray.
Mix all dry ingredients. Add wet ingredients and stir well. Pour into loaf pan and bake for about 45 minutes. (I haven't perfected the timing yet)
My favorite mix is Carbquick, lemon Koolaid, vanilla protein, vanilla Torani, Princess flavor emulsion and figs. It's a little grainy from all the protein powder, but tastes good. Another good one is Orange Koolaid and Orange emulsion with a few dried cranberries. I prefer emulsions to extracts.

I've seen them online on sites that sell baking supplies, but I ran into a treasure trove of them at ROSS. My favorite flavor is "Princess" which is a mix of vanilla, lemon and something else. The orange is wonderful. They also had coconut, lemon, almond and others I can't remember now. Because they don't have alcohol in them, you can use them in yogurt and don't get that sharp alcohol taste.

Hi Rose. I'm doing great. I've just (finally) dropped off a 3 month stall. I didn't get frustrated or anything because I can easily live with the weight I am now - anything else is a bonus. I think that around Christmas I got interested in food again but during the last week I noticed that I just didn't care about food. I'd concentrate on protein and water and vitamins but really didn't care about what I ate. That seems to be the key for me.
I usually make a protein cake on the weekend and eat it all week. I keep it in the frig. For a real treat I'll put a little cream cheese on it and sprinkle a packet of flavored splenda (usually vanilla). That stuff is great.
I'm getting ready to take my first airplane trip since surgery and can't wait to see how I fit into the seat. My last trip was so embarrassing and so uncomfortable.
