wls friendly rice puddding

there is no rice in this, the cottage chsses has a similar texture:

 1oz box instant vanilla pudding mix (4 serving size)
160z container  small curd cottage cheese
1 3/4 cups milk
1/2 cup sugar free cool whip
1/2 cup raisins
1/2 tsp vanilla
1/4 tsp cinnamon
1/8 tsp nutmeg
splenda to taste
mix the pudding mix, milk,vanilla,cinnamon,and nutmeg,mix  till smooth, fold in cottage cheese and cool whip,and raisins then add splenda if you need to

The cottage cheese gives the FEEL to the rice pudding.  You don't notice the typical cottage cheese-ness that some don't like!

fat free ricotta and fat free cottage cheese have very little differences in nutritional value.  I think cottage cheese tastes better though.
