Chia seed pudding~ two ways

 I am 4 weeks post op RNY today. I  Iove chia seeds, and I used to make puddings with them. I am so tired of the sugar free puddings!

Here are two different ways of making a chia seed pudding I thought I would share. I have found so many great recipes on this site .

One turns out like a rice/ tapioca texture, the other smooth. I eyeball things, so measurements are approximate. It will make way more than you can eat at one time by the way. It keeps in fridge well.

 I would imagine these are good for hydration too :)




Blueberry ( or insert other fruit here) smooth chia seed pudding:


 First make a chia gel by mixing 5 or 6 Tbls of chia seed with about 2 cups of  room temp water and let sit for at least 15 minutes till gel consistency. They will soak up the water. Then make the rest:

 1/2 C. chia gel
1/2 C. frozen blueberries
 stevia to taste ( flavored stevia like vanilla is good in this)

Blend till smooth.

I add a tsp of spirlunia sometimes too.

 Chia seed ' tapioca' pudding:

 soak about 5 Tbsp chia seed in about 2 cups fortified almond or soy milk overnight , in fridge.
  next morning stir it and....

add some stevia to taste, and, depending on your stage, stir ins of your choice: fruit, pumpkin, nuts, Cinnamon, unsweetened coco powder ect... : )

 You could use Truvia too, looks good gonna try it.

These look great and I am going to try them! I also am not crazy about some of the ingredients in jello pudding.

5 or 6 Tbls of chia seed

How many servings for your recipe?  Your looking at 400 calories and 27g of fat for the 6 tbsps.

Chia Seed (1 tbsp) is 68 calories, 4.5g fat, 0.5g carb (net), 2g protein.

If you're making 4 servings (or more), it sounds good.

 Wow, my notification settings are wacked. ha ha   Anyways....chia seeds soak up a HUGE amount of liquid, so 6 TBL of soaked would turn into over  a cup or so with liquid included. I don't have any portion sizes other then what is good for each person depending on their stage :)  

They have allot of benefits including helping you stay full longer, hydration, omega acids, helping to balance blood sugar, anti~ oxidents   blah blah...  

You can really just play around with them, add protein powder to the pudding recipe, grind them, add a TBS to a shake. You can even bake with them, but I never have tried that yet.  Here is a chai spiced tapioca style pudding I made before WLS.  Those are goji berries, walnuts and yes, banana slices with cinnamon, nutmeg and cardamom

It looks kinda like slop ! but it's so good..

Adding a scoop of vanilla protein powder would make it high protein~ along with the milk used, and of course the serving size would be much smaller then the pic.  That Basil tea looks refreshing .

Your recipe sounds very interesting. I will give the 2nd one a try this evening. I love chia seeds and did not realize you could make a pudding type dessert with them. I have some almond milk in the fridge and will mix up a batch tonight to see how it comes out in the morning. Thank you for the idea.  Terry
