sautéed tomatoes with poached egg

I had a ton of tomatoes and was looking for a way to add some protein.  

I ended up sauteing some onion in oil then added a bunch of cut up tomatoes and some herbs and salt.  After it cooked a while and released a lot of juice I cracked an egg on top and put on the lid and let it poach.  Scoop out the egg and some of the tomatoes in a bowl.  Top with a little parm. cheese and break open the yolk.  Mixed in with the  tomato juice makes a really good sauce, well it's more like a stew.

Overall really low cal and the egg adds protein.

Recently I had less tomatoes and summer squash so I also did it with 50/50.  Squash gives up a lot of water too so you still end up with something you can poach an egg on.

this is well known Israeli dish, calls shashuka. It is really very good. You can add some garlic, onions and other vegi of yyour choice

I just made another batch this week.

 I just did a recipe search and you are right.   I might try some paprika like one receipe suggested.  I'm not a huge fan of green peppers so I'll leave those out.

Thanks for posting this information.  I tried the original recipe you posted and it was INCREDIBLE!!  I have to admit that is the first time I really really enjoyed eating an egg since surgery!  This is definately going to become one of my favorite recipes!

Thank you!!  I have had difficulties with eggs since surgery, but this was INCREDIBLE!!  I have had it several times over the last 2 weeks and each time seems better than the one before!  I even drop in a wedge of Laughing Cow cheese - a little extra protein!
