I don't really have a recipe but here's what I do. Cook the cauliflower completely ****il it is totally mushy). Drain it well, Mash with a hand held mixer or potato masher. Add in some fat free 1/2 and 1/2, salt, pepper, margarine to desired taste / consistency.

You can also add in things like fat free garlic and herb cheese (the spreadable kind) or other spices etc.

Cauliflower-Sour Cream "Faux Mashed Potatoes"

Ingredients

1 head cauliflower (2 pounds), cut into florets (about 8 cups)
2 tablespoons sour cream
2 tablespoons heavy cream
1 ½ tablespoons unsalted butter
1 teaspoon salt


Directions:

 Bring a large pot of salted water to a boil over high heat. 
Add cauliflower florets; coo****il tender, 10 to 12 minutes. Drain.
Puree cauliflower in a food processor, adding florets in batches. 
Add sour cream, heavy cream, butter and salt; process until smooth and well combined. 
Reheat gently, if necessary.

** You can "up the ante" on this recipe by adding a little crispy crumbled bacon and shredded cheddar cheese..tastes like a loaded baked potato!**

I cook mine until it's mushy, drain and then add a little butter, some Greek yogurt, garlic, salt, pepper and chives to taste.
