I call this "kick ass chicken"....LOL
Take the chicken breasts and pound them thin.
Take a bowl & add fresh spinach, fresh sliced mushrooms, picco de gallo, and some shredded swiss cheese, and toss together. I also add a few drops of hot sauce, but its not required. {{I dont have exact amounts, just whatever looks like enough}}.
Place on the chicken breast.
Put a tad bit of water {{or tomato juice}} in the bottom of the pan & cover with foil.
Bake at 350 until done.
Its YUMMY!

These two things are my favorite to do with chicken breasts right now.....
1) Stuff them with goat cheese and roasted red peppers....marinated first and then also basted with Sundried Tomato and Oregano salad dressing.
2) Throw the breasts in the crock pot with a brick of cream cheese and some salsa. Also throw in whatever veggies you like...i.e. corn, green beans, peas, cabbage, carrots etc....this makes the chicken so tender that it will literally fall apart. And so tasty!
