apple cake

so i highly doubt this is original but i kind of make it up as i went
once in a while when i have a sweet urge i make baked apples, well the apples i have are kinda small, so i just peeled them, cut them up into really large chunks sprinkled cinnamon over them and poured a low carb wheat pancake mix over it, but sparingly so it didnt cover everything, just drizzled over it. then i topped with a sprinkling of splenda brown sugar and some s/f maple syrup and baked. it started to rise and make this pie cake thing
it ended up so good, i asssumed either it would be good or a waste of my 5 apples lol

I found this reciepe and tried it last night and it was wonderful!!!!

Apple Cake

This cake is so moist and yummy! A must for those of us that have had RNY weight loss surgery and need a little taste of "normal" dessert.

60 Minutes to Prepare and Cook

Ingredients

1 eggs
1 cup Splenda (granulated)
1 cup flour (all purpose)
4 medium apples, diced or use less if desired
(I used Fuji apples)
4 tbsp. butter or margarine
1/4 cup chopped walnuts
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp nutmeg
1/2 tsp salt
1 tsp cinnamon

 

Directions

Preheat oven to 350 degrees

Mix together the sugar and butter until well blended. Core, peel and dice the apples. Beat the egg, mix in vanilla and walnuts then add to the apples. Mix Splenda/butter with the apple mix. Sift remaining ingredients and mix into the batter*.
Grease an 8" square pan and pour batter into it.
Cook for 45 minutes, let cool thoroughly before cutting into squares.

*batter will look like it has disappeared with all of the apples mixed in, fear not, it's just hiding and the end result is pretty nifty!

I cut into 12ths, stats are based on 1 square.

that sounds yummy i wish i had thought of walnuts.
i can do all purpose flour, it sends me into carb overload so thats why i chose the low carb no sugar wheat pancake mix!

Hi...does the recipe call for 1/2 or 1 tsp of vanilla??  just wondering....I'm hosting a jewelry party on a Sat. morning with both WLS people and non...thot this sounded really good for my surgery buddies!!  sounds good....thanks for sharing...Patti K.

ya thik I could use Sugar free applesauce instead of the chopped up apples? how much ya think should I use~

Hi Jill!  That sounds wonderful!  I am going to try it.  Do you think it can be made in cupcake pans for individual servings?
