Blueberry ricotta muffins and Black bean salsa

Not together!  lol  

 These two recipes were shared our local bariatric center support group meeting this month.  Samples were there too and they were both delish!


Blueberry Ricotta Muffins (these were delicious!  really moist)

1/4 c butter
1/2 c sugar sub.
1 whole egg
1 egg white
1/2 tsp vanilla
3/4 tsp almond or orange extract
1/2 c LF ricotta cheese
3/4 c flour (wheat was used in the samples)
1/2 c almond flour (this can be made by grinding almonds yourself)
1/4 tsp salt
1 tsp baking powder
1 1/2 c blueberries (if use frozen it will take longer to bake)

Cream butter, sugar sub.  Blend in eggs, ricotta and extracts until mixed.  Add all dry ingredients to wet and mix until combined but do not over mix.

Bake 350degrees for 20 min for regular muffins.  12-14 min for minis.
5 g protein each

*Note:  protein powder can also be added to these.  Use slightly less flour if adding protein powder.

  Black bean salsa

1 can black beans, rinsed and drained
1 can diced tomatoes (fire roasted recommended)
2 limes juiced or 2 TB red wine vinegar
1 TB oil (olive or canola)
2 tsp ground cumin
2 tsp chili powder
1/2 tsp salt
1/2 tsp pepper
1 TB garlic
1 small onion diced
1-2 tsp hot sauce to taste or cayenne pepper
fresh cilantro

Mix oil, juice and seasonings until blended.  Add remaining ingredients.  Cover and chill.
Serve cold.  Best if it has set 6-8 hrs so flavors can develop.  Great as topping for burgers, chicken or fish or with baked tortilla chips.

 You're welcome.  I tried both out last night and they really were good.  Can't wait to get out to the store so I can make them myself.  The muffins would be really good for breakfast.  I'm gonna add protein powder to mine and see if they are still as good.
