Spicy Asian lavash wrap

Ingrediants:

1/2 can bamboo shoots; drained and minced
1/2 can water chestnuts; drained and minced
3 TBLS sherry
1/4 cup chopped peanuts dry roated peanuts (very easy to do in a
food processor
)
2 TBLS hoisin sauce
1 TBLS healthy peanutbutter
2 tsp low-sodium soy sauce
2 tsp hot-pepper sauce (I use Thai hot sauce)
2 packets sugar sub. (ie: splendia, truvia is what I used)
1 TBLS minced garlic (I used the jarred minced garlic)
1/2 cup minced purple onion (less starch then white)
1/2 lb ground chicken (can use turkey, pork, or extra lean beef)
1 tsp ginger
1/4 tsp salt (optional)
2 tsp toastes sesame oil (VERY IMPORTANT for flavor!)
2 lavash bread (wraps) cut in half (for a total of 8); or 8 small butter lettuce leaves
2 whole green onion, chopped
1 small english cucumber juilianed (really small, thin slivers of cucumber, like ribbons)

Directions:
~Mix first nine ingrediants together in a medium bowl and set aside.
~spray large skillet with oil and saute garlic for 2 minutes over medium heat
~add onions to skillet and saute for 3-4 minutes until tender
~Add meat, ginger, & salt and coo****il meat is no longer pink (you MUST use extra lean hamburger so there is very little to no fat)
~add mixture you set aside to skillet and heat all the way through, drizzle on the sesame oil and mix well
~remove from heat
~spread 1/4 spicy mixture over one of your wraps (or lettuce leaves) and top with a sprinkle of green onion and cucumber strips


Comments:
The basic recipe from the cookbook was good, but it needed something, so I tweaked it! hehe I can't tolorate eating lettuce so I go to my old stand by and wrapped it in a lavash and dang it was yummy goodness with a nice Asian flare! I also added the peanuts since the peanutbutter was not very strong. I LOVE Thai food and this is very remeniscent of it.

I was worried about the bamboo and water chestnuts being minced and losing their nice sharp crunch, but they were fab!!! I ate half of a half and I was FULL!! In fact I didn't even eat all of that half!!! This is a FILLING dish! If you are finding that food is not filling you up, then this is a meal that really will! Wrapped in a LOW carb lavash (now there are carbs in the water chestnuts and bamboo shoots, but those are natural carbs not white processed flour carbs).

I rolled up half of the portion of the mixture in one full lavash and then cut it into fours and I think it would have looked better had I pre-cut the bread and then filled them (as I have out lined in the directions above). It of course will still taste fab!
