Grandma's Potatoe Salad


3 full cups diced cooked potatoes
3/4 cup finely chopped celery
1/4 cup finely chopped white onion
1/3 cup Kraft fat-free mayonnaise
2 teaspoons yellow mustard
1 tablespoon white vinegar
1 tablespoon splenda
2 tablespoons sweet pickle relish

In a medium bowl, combine potatoes, celery, and onion. In a small bowl, combine mayo, mustard, vinegar, splenda, and pickle relish. Add this mixture to the potatoe mixture. Mix gently to combine. Cover and refrigerate at least 30 minutes. Gently stir again just before serving.

A great way to lower the carb count fromthe potatoes would be to sub half of the potatoes with cauliflower... Cut it into chunks and microwave it until tender... You get the same flavors - so good!!
